The Johnson County Food Safety Program protects public health from
unsafe food handling practices that may cause foodborne illnesses. It does so under a contractual
arrangement that Johnson County Environmental Department has with the Kansas Department of Health
and Environment to enforce the Kansas Food Code. The Kansas Food Code provides preventive safeguards
designed to minimize the hazards that lead to foodborne illness, thus ensuring safe food and
optimal levels of sanitation in food establishments.
Regulations apply to restaurants, school food service, food service in retail grocery stores,
mobile units, caterers, temporary events such as fairs, and ice cream trucks. The food service
industry and the Environmental Department share the responsibility to ensure that food provided
to the public is prepared and served in a safe and unadulterated manner, thereby preventing the
outbreak of foodborne illness.
Prevention and intervention are key components in our program. Environmental health specialists
conduct routine inspections, follow-ups, and respond to complaints about unsafe food handling to
promote sanitation standards within the establishments. In addition, the specialists are proactive by
reviewing pre-construction plans to eliminate public health problems before they occur.
