Grease Interceptor Information

The following are requirements for new grease interceptors installed at food service facilities located within the boundaries of the Johnson County Wastewater Districts.
  1. A grease interceptor is required to be installed on all tenant finishes or new construction where food is prepared and at existing facilities when the menu or kitchen equipment is changed in a way that may produce more grease. A grease interceptor is not required for facilities that serve drinks or prepackaged foods only. Low grease discharging facilities may be eligible for a waiver from installing any grease removal device. Contact Shane Burnett at 913-715-6900 for more information.

  2. Prior to starting any construction related to the grease interceptor or associated piping and plumbing, the food service facility must first receive a letter from the JCED approving the facility's grease interceptor plan and must have applied for and been issued a sewer connection or modified use permit from the Johnson County Wastewater Department. Call Renee Riggs at (913) 715-8520, for a sewer connection or modified use permit application.
  1. The grease interceptor must be of sufficient size to provide a 30-minute detention of the peak waste water flow. The minimum size is 1000 gallons. The maximum size is 2000 gallons. The interceptor must be located as to be easily accessible for pumping and inspection. Indoor grease interceptors or grease traps are not permitted in new facilities.

  2. The vent line from the sample port riser on the interceptor outlet must be connected to the building waste vent piping.

  3. The JCED must inspect the interior plumbing fixtures that are attached to the interceptor before the plumbing is covered. Call Shane Burnett at (913) 715-6900 to schedule an inspection of the interior plumbing before the piping is covered.

  4. The Johnson County Wastewater Department must inspect the installed interceptor and exterior piping prior to backfilling.  Contact the permit department at (913) 715-8520, to schedule an inspection.

  5. Garbage disposals are prohibited in new food service facilities.

  6. Prior to discharging wastewater to a new grease interceptor, a food service facility must have been issued a grease interceptor operating permit from the JCED. This permit will be issued after all construction is complete and the JCED has determined that the interceptor complies with the Johnson County Sewer Use Code.

The following plumbing fixtures (if applicable) must not be connected to a grease interceptor:

  • hand washing sinks
  • bar sinks not receiving significant quantities of grease

The following plumbing fixtures (if applicable) must be connected to a grease interceptor:

  • low temperature chemical (e.g., chlorine) sanitizing dishwashers
  • high temperature (greater than or equal to 180°F) sanitizing dishwashers which must have a cold water solenoid-operated valve or similar device that mixes cold water with the discharged hot water from the machine
  • 3 compartment sinks
  • mop sinks
  • floor drains in kitchen areas
  • wok drains

The Johnson County Grease Interceptor Plan Review form must be filled out and submitted with:

  1. the application for new construction
  2. all food service plan review forms (forms 1 and 2)
  3. copy of the menu
  4. full set of construction plans
  5. letter of representation (if applicable)
  6. $288.75 grease interceptor plan review fee
