- The grease interceptor must be of sufficient size to provide a 30-minute detention
of the peak waste water flow. The minimum size is 1000 gallons. The maximum size is
2000 gallons. The interceptor must be located as to be easily accessible for pumping and
inspection. Indoor grease interceptors or grease traps are not permitted in new facilities.
- The vent line from the sample port riser on the interceptor outlet must be connected
to the building waste vent piping.
- The JCED must inspect the interior plumbing fixtures that are attached to the
interceptor before the plumbing is covered. Call Shane Burnett at (913)
715-6900 to schedule
an inspection of the interior plumbing before the piping is covered.
- The Johnson County Wastewater Department must inspect the installed
interceptor and exterior piping prior to backfilling. Contact the permit
department at (913) 715-8520, to schedule an inspection.
- Garbage disposals are prohibited in new food service facilities.
- Prior to discharging wastewater to a new grease interceptor, a food
service facility must have been issued a grease interceptor operating permit
from the JCED. This permit will be issued after all construction is complete and the
JCED has determined that the interceptor complies with the Johnson County Sewer Use Code.
The following plumbing fixtures (if applicable) must not be connected to a
grease interceptor:
- hand washing sinks
- bar sinks not receiving significant quantities of grease
The following plumbing fixtures (if applicable) must be connected to a grease
interceptor:
- low temperature chemical (e.g., chlorine) sanitizing dishwashers
- high temperature (greater than or equal to 180°F) sanitizing dishwashers which
must have a cold water solenoid-operated valve or similar device that mixes cold
water with the discharged hot water from the machine
- 3 compartment sinks
- mop sinks
- floor drains in kitchen areas
- wok drains
The Johnson County
Grease Interceptor Plan Review form
must be filled out and submitted with:
- the application for new construction
- all food service plan review forms (forms 1 and 2)
- copy of the menu
- full set of construction plans
- letter of representation (if applicable)
- $288.75 grease interceptor plan review fee

license from the Kansas Department of Health and Environment (KDHE) before opening. JCED
