New Grease Management Requirements
for 2003

Did you know that grease, oils and fats from food service establishments can block sanitary sewer lines and cause damage to the wastewater system and the environment? As the number of restaurants grows and dining out becomes more and more popular in Johnson County, grease blockages are a looming problem and result in significant repair costs to the Johnson County Unified Wastewater Districts. Below are pictures of recent releases to the environment due to sewer lines clogged with grease.

Grease damage to the environment


To address the ongoing problems with wastewater system blockages and backups from grease discharges, changes to the Johnson County Sewer Use Code are effective starting January 1, 2003. The Code changes impose new grease management requirements at food service establishments with an exterior grease interceptor connected to the Johnson County Unified Wastewater Districts (JCUWD).

Many of the changes to the Sewer Use Code simply formalize existing requirements or practices and may not materially affect your current operation. Other changes pertain only to new food service establishments and do not affect existing facilities unless they are known to be causing a grease-related wastewater problem. All food service facilities with an exterior grease interceptor are required to obtain an annual grease interceptor operating permit from the Environmental Department and to pay an annual operating permit of $288.75.  These are new requirements that can be found in Article 4, Part E of the Code.
